Explore an extraordinary all-Abruzzo experience with Alexander Biasutti, Managing Director of With Love From Italy while savouring on Itameshi Italian-Japanese fusion dishes specially-curated by Chef Shimbo Katsunori. 

Hailing from Niigata prefecture, Chef Shimbo started his culinary journey in the kitchen of Saint Germain in Tokyo. His passion for fine culinary led him to Paris where he studied French traditional cuisine under Chef Gerard Besson (2 Michelin Star) and later in Italy, working under Chef Gualtiero Marchesi (3 Michelin Star) who is regarded as the founder of modern Italian cuisine. Later, Chef Shimbo was headhunted to Los Angeles as Head Chef at the Picnic, before moving onto top restaurants where famous and celebrities dined as well as catering for the Academy Awards. 

Today, with over over 30 years of experience in the art of Japanese, French, Italian and Asian fine cuisines, Chef Shimbo has created a special culinary journey for our Abruzzo-ladened degustation evening with a Taste of Itameshi at a'ROMA DININGS : https://aromadinings.com/

What is Itameshi:

A perfect fusion cuisine from Japan that combines traditional elements of both Japanese and Italian food. The word refers to authentic Italian cuisine and in Japanese language, Itameshi simply translates to ‘Italian food’. The name comes from the combination of the Japanese name for Italy and the Japanese word for meal. It also describes Japan's Japanese-Italian fusion food genre.

Whether wanting Italian classics with a Japanese twist or curious about new flavor combinations, Itameshi is a delicious fusion of two culinary traditions. Inspired by traditional Italian flavors, Itameshi offers a fresh, creative and respectful interpretation of fusion cuisine with a distinctive Japanese twist where by adding ingredients such as tobikko, shiitake mushrooms, and super-fresh seafood, one can surely find flavors of Italy with that unmistakable distinctive umami flavor. 

About Abruzzo:

Nestled between the Adriatic Sea and the Gran Sasso and Majella massifs in the Apennine Mountains, Abruzzo enjoys a climate characterized by notable temperature variations – an ideal climate is for winemaking. The region's viticulture spans an area of ​​36,000 hectares – the area with the greatest production is that of the Colline Teatine, located around the province of Chieti which is about 20 minutes west of Pescara, Abruzzo's seaside capital. Abruzzo's three signature wines are the white Trebbiano, the Cerasuolo rosé made from Montepulciano grapes, and the red Montepulciano, and these vines have been joined by varietals that also yield interesting wines.

Abruzzo is best known as the home of the Montepulciano grape. It has two DOCGs, seven DOCs (see map on this page), and nine IGPs. About 58% of production is red and nearly a third is at the DOP level. Its primary grape varieties are Montepulciano (57%) and Trebbiano (29%).

This evening, Chef Shimbo will prepare our degustazione menu using his cooking technique that focuses on the best seasonal ingredients.
